Kiki was sick today, and because I still feel bad about stiffing her on the Thanksgiving pie, I decided to make her chicken soup. I went with tri-color matzoball soup (red, yellow and green ones), a silly idea I adapted from Jewish Woman magazine. She seemed to think that was strange because I'm not Jewish or a woman, but I just have a strong interest in matzoballs. I'll agree that it's kind of an ethnic food crime to use Christmas colors.
Red Matzoballs 2 eggs
2 tablespoons rosemary-infused olive oil
3 tablespoons tomato sauce
1/2 cup matzo mix (1 packet out of a Manischewitz box)
white pepper to taste
Yellow Matzoballs
2 eggs
2 tablespoons canola oil
1 teaspoon turmeric
1/2 cup matzo mix
white pepper to taste
Green Matzoballs
2 eggs
2 tablespoons olive oil
1 ounce (i.e. "some") baby spinach leaves pureed (strain out excess water)
1/2 cup matzo mix
white pepper to taste
